All about oil

You’ve become a fan of olive oil, using it for everything from frying and roasting to salads. But you’re also tempted to try out some of the many other vegetable oils available in your local store. After all, variety is the spice of life!


For delicious salads and delicately-flavoured dishes

If you like inventing delicious and unusual salads, then you’ll love experimenting with all the different oils on offer. To make a change from your usual extra-virgin olive oil, for example, you could try walnut, hazelnut or even pistachio-nut oil. Each has its own, highly distinctive flavour and just a few drops are enough to pep up a salad. If you want your vinaigrette to be a little more discreet, however, choose something with a much milder, more neutral taste such as sunflower or grapeseed oil.

If you’re looking to replace butter with a vegetable oil for allergy or health reasons, coconut oil is the one to go for. Fairly mild in taste and available in a solid form, it’s ideal for making cakes and for frying and sautéing. Coconut oil is also perfect for cooking at high temperatures.

And finally, if you need something with a little pizzazz for your oriental dishes, then nothing beats sesame oil. Perfect for a vegetable stir fry with soya sauce!

Top tip: Macadamia nut, hemp and avocado oils are now available in small bottles for occasional use and are rapidly gaining in popularity!
